dc.description.abstractAscorbyl palmitate ([(2S)-2-[(2R)-3,4-dihydroxy-5-oxo-2H-furan-2-yl]-2-hydroxyethyl] hexadecanoate) is the product of an esterification reaction between the carboxylic group of palmitic acid and the primary alcohol group of ascorbic acid. The chemical structure is shown in Fig. 3.1.1. This compound is found as with a white or yellowish white powder with an odour of citrus and a melting range of 107–117°C. It has a high solubility in ethanol and in water but it is insoluble in fat (EFSA, 2016; Igoe, 2011). [excerpt]en_GB
