Abstract: Anyone who has flown on a commercial aircraft today, has come into contact with inflight food services, yet few have an understanding of the processes that are involved to provide wholesome food and beverages to the passenger. Few passengers realise that the provisioning of inflight food services is a highly complex task that is performed by a unique segment of the total food service industry. In the airline industry, time is money and the inflight food services are part of the race to meet the close time schedules characterising the airline industry's concern with passenger service. An introduction and explanation of the flight catering system, together with information about the catering for special dietary requirements, is followed by step by step procedures involved from the purchasing of food products to dispatching the meals to the aircrafts. With this dissertation the reader will get an idea about the basic procedures, involved in the local inflight catering industry.
