Abstract: For the sake of clarification and in order to avoid unnecessary ambiguity, there are several points that must be taken into consideration prior to the actual presentation of the dissertation. When one talks of the Canning Industry one refers to that as put forward in the Census of Production - Industry No.205 - "The Canning of Preserving Fruits: and Vegetables". Although the industry is a long-established one, the period that this exposition will discuss is 1956-1968_ This is because there are no available statistics prior to 1956 and after 1968. Because of my personal association with the Canning Industry, it has not been possible to obtain first-hand evidence for reasons which are obvious. Therefore, except for the figures and graphs that are presented, the essay is an entirely personal exposition of my views on this particular topic.
