Abstract: Amongst the numerous articles that our honorand Professor Anthony Bonanno has published during a distinguished career, his paper on the distribution of villas in the Maltese islands stands out for its timely originality, choice of theme and discerning review of disparate archaeological evidence. The nature of the production of olive oil is best illuminated by a study of the implements used to process the fruit, namely the milling and pressing equipment and the storage facilities. The purpose of this paper is to review and expand on this evidence for olive oil production technology used in Malta in antiquity. The first part will discuss the sites and finds relevant to olive oil production on the islands. This is followed by an assessment of the type, layout and prevalance of the stone equipment typical of an ancient Maltese olive press. This leads us to propose a new interpretation of the layout of the local olive press in the Punic and Roman period.
