Abstract: The aim of this study is to outline general aspects of apiculture and addresses quality of Maltese honey in terms of pesticide residues, contamination by heavy metals and parameters affecting the freshness and properties of honey. Eighteen Honey samples were collected from strategic areas around the Maltese Islands and were analysed for the moisture content, acidity, hydroxymethylfurfural content, twelve heavy metal residues and seven organophosphate pesticide residues. Analyses were performed at the University of Bari, Faculty of Veterinary Medicine. For the first time, such a study is providing results of heavy metals and other parameters found in Maltese honey and it provides a first indication of the effects of industrial zones on honey production.
