Abstract: Many bioactive phenolic compounds have been reported in hive products regarding its health benefits and influences. This report discusses the results obtained from the analysis of the polyphenolic content in twenty thyme honey samples from Greece and Cyprus. This parameter was determined spectrophotometrically by the Falin Ciocalteu reagent, obtaining values that range between 360 mg/kg and 142,9 mg/kg.
